1/2 Cup Fresh Breadcrumbs

3 Tbs Whole Milk

1 LB Bold Chipotle Seasoned 85% Lean Ground Beef

3/4 Cup Barbecue Sauce, divided

1/4 Cup Coarsely Grated Onion

3 Tbs Finely Chopped Fresh Parsley

2 Garlic Cloves, minced

1 Egg, beaten

Accompaniment: Mashed Potatoes


  1. Preheat oven to 350°F. Line large rimmed baking sheet with foil. Place wire cooling rack on foil.
  2. In large bowl, mix breadcrumbs and milk. Soak 10 minutes. Mix in beef, 3 tbs. barbecue sauce, onion, parsley, garlic, egg, and 2 1/2 tsp. salt. Shape into 6×4-inch oval loaf and place on rack on baking sheet. Bake 30 minutes.
  3. Spread 3 tbs. barbecue sauce over meatloaf and bake 30 minutes, or until instant-read thermometer inserted into center registers 150°F. Rest 10 minutes.
  4. Slice and serve with mashed potatoes and more barbecue sauce.
