Ingredients

1 lb Korean BBQ Seasoned 85% Lean Ground Beef

1/4 cup vegetable oil, plus more for brushing skewers

1/4 cup soy sauce

3 tbs fresh lemon juice

2 tbs finely chopped peeled fresh ginger

1 tbs light brown sugar

1 tbs sesame oil

3 cups thinly sliced red cabbage

2 carrots, peeled, cut into matchstick-sized strips

2 cups snow peas, strings removed, thinly sliced lengthwise

2 green onions, thinly sliced

Method

  1. Preheat grill for medium-high heat. Divide meat into 8 balls. Place 1 ball on end of each of 8 metal or wooden skewers (if using wooden skewers, soak in water 30 mins). Form meat into 5-inch-long sausages along skewer, packing tightly. Lightly coat with vegetable oil and sprinkle with salt.
  2. Grill skewers, turning as needed, for 6 to 8 minutes, or until meat is brown on all sides and cooked through. Transfer to 4 plates.
  3. In large bowl, whisk soy sauce, 1/4 cup vegetable oil, lemon juice, ginger, sugar, and sesame oil. Season dressing with salt and pepper. Brush cooked skewers with some dressing.
  4. Toss cabbage, carrots, snow peas, and onions with dressing to coat. Divide among plates.
