1 lb Korean BBQ Seasoned 85% Lean Ground Beef
1/4 cup vegetable oil, plus more for brushing skewers
1/4 cup soy sauce
3 tbs fresh lemon juice
2 tbs finely chopped peeled fresh ginger
1 tbs light brown sugar
1 tbs sesame oil
3 cups thinly sliced red cabbage
2 carrots, peeled, cut into matchstick-sized strips
2 cups snow peas, strings removed, thinly sliced lengthwise
2 green onions, thinly sliced
- Preheat grill for medium-high heat. Divide meat into 8 balls. Place 1 ball on end of each of 8 metal or wooden skewers (if using wooden skewers, soak in water 30 mins). Form meat into 5-inch-long sausages along skewer, packing tightly. Lightly coat with vegetable oil and sprinkle with salt.
- Grill skewers, turning as needed, for 6 to 8 minutes, or until meat is brown on all sides and cooked through. Transfer to 4 plates.
- In large bowl, whisk soy sauce, 1/4 cup vegetable oil, lemon juice, ginger, sugar, and sesame oil. Season dressing with salt and pepper. Brush cooked skewers with some dressing.
- Toss cabbage, carrots, snow peas, and onions with dressing to coat. Divide among plates.
